Tofu generally consists of three ingredients - soybeans, water, and a coagulant. The soybeans are soaked, ground into a liquid, and then filtered to remove the solids. The remaining liquid is then boiled, and a coagulant, such as nigari or gypsum, is added to cause the proteins in the liquid to form curds. These curds are then pressed into blocks of tofu.
